Za'atar Melon and Cucumber Salad

Za'atar Melon and Cucumber Salad

Summer 2020 has been all about fresh and bold flavors. Za’atar is what I would consider a bold move when it comes to working with different spices. It’s pungent but pairs well with more mellow and refreshing ingredients.

 

This salad was inspired by some of my favorite chefs.

Here’s a small backstory on Za’atar. Za’atar is a middle Eastern spice used in so many dishes such as curry, hummus, and sometimes just sprinkled over pita. Its a blend of very pungent flavors. Some of which include Cumin, dried oregano, sesame seeds, salt and most importantly Sumac, Sumac is what gives this unique spice its tanginess and earthy feel. The possibilities on what to pair with Za’atar are many but this salad is by far my favorite way. It’s quite refreshing perfect for those hot summer days and goes incredibly well alongside a nice juicy steak.

 

How refreshing does this look? Big bold flavors and beautiful colors.

Pep Time : 10 min Cook Time: 5 min

Yields: 2-4 Servings


Ingredients:

  • 4 oz ripe cantaloupe

  • 3 oz baby cucumbers

  • 2oz marinated Feta

  • 1 oz olive oil

  • 1/2 tsp Salt

  • 2 tsp Za’atar spice

  • 1 oz red wine vinegar

  • 1 oz shallots

  • 10 mint leaves




Directions:

  1. Cut the cantaloupe and cucumbers into medium sized bites and set aside or cool in the fridge.

  2. In a small bowl combine, olive oil, shallots, red wine vinegar and salt to create the dressing.

  3. Combine all the ingredients except the mint and Za’atar spice into the dressing tossing lightly to incorporate everything thoroughly.

  4. Chop or simply rip apart the mint into the salad giving one last mix before sprinckling Za’atar over the top.

  5. Place the salad in the fridge for at least 30 min before serving. Enjoy!
