Creamy Lemon Orzo Recipe

What better way to make a comeback than with a recipe that will take you only 20 minutes and requires just a handful of ingredients? This Creamy orzo pasta is simply that. Easy, quick and quite frankly freaking delicious.

A year later I’ve managed to finally settle into this new role, Executive Chef. A lot of sleepless nights, plenty of growing pains a grey hair or twelve, we’ve settled in quite well. Reaching a goal, you’ve worked so hard to achieve comes with a lot of time and attention in order to nurture this idea you once thought would never happen. Cooking for me is my life, but leading, leading a group of individuals who I see so much of myself in. That is my purpose.

With that ironically, I have very little time to make dinner after an 11-hour shift. This recipe comes from my love of small pastas (weird I know) combined with my love of all things citrus. I like to keep it light and quick with just three key ingredients. Lemon, a good block of Parmesan cheese and orzo pasta. Making this takes little to no time and best of all, requires one cooking pan which makes the cleanup process breezy. Make it for just yourself after you’ve worked a long shift or in a large batch to make a lasting impression at your next dinner party.


Prep Time: 8min Cook Time 12min

Ingredients:

  • 1 cup Orzo pasta

  • 2 cups of water

  • 1 tsp of butter

  • 1 large lemon + zest

  • 1 1/2 cup Parmesan cheese + some to garnish

  • 1 medium white onion

  • 1 clove of garlic

  • Small bunch of parsley

  • Salt & pepper to taste

Method

  1. Begin by finely chopping the white onion and clove of garlic into a small dice.

  2. In a medium hot pan add the butter allowing it to melt for about to 2 min.

  3. Next add the garlic and onions stirring for about 3 minutes or until they become translucent and fragrant.

  4. Once the onion has cooked down add the orzo until it is coated in the butter, shortly after adding the water.

  5. Allow the pasta to cook for about 6-7 minutes.

  6. In the meantime, grate 1 1/2 cup of parmesan cheese.

  7. Once the pasta water has mostly absorbed combine the cheese and juice of one lemon.

  8. Mix well until combined and creamy.

  9. Adjust seasoning and parmesan to taste.

  10. Serve alone or with your protein of choice.
