A Brunch Worthy Avocado Toast

I think of brunch and automatically think, mimosas! Right after that I think avocado toast! It’s no doubt that all three go hand in hand with one another.

 

This recipe is so easy, I almost feel like I don’t really need to explain it. However there are a few factors that I think help elevate an avocado toast from just any other toast. I like to make sure I use freshly baked bread, the one I used in this recipe I found in my local grocery store and it had little bits of garlic baked into it. My avocados were just slightly over ripe making it really easy to spread a thick lemony layer over my bread. If I had any, I would have added crumbles of a salty cheese like a feta or cotija, this would have really brought all the flavors together. Either way make it your own, use what you have and don’t forget to have a glass of mimosa or two along with it.

I like to use the ingredients I already have on had, I especially like to top my toast with fresh cilantro for that refreshing bite.

 

Prep time: 10 min Cook time: 10 min

Yields: 4 toast

 


Ingredients:

  • 4 hass avocados (slightly over ripe)

  • 1 whole lemon

  • 1 teaspoon of kosher salt

  • Fresh baked bread of choice

  • 1 teaspoon of black pepper

  • Chili flakes to taste

  • 1/2 cup of cherry tomatoes cut in half

  • Fresh picked Cilantro


Directions:

  • Begin by cutting baked bread into 1 1/2 inch thick slices.

  • Toast in the over or in a toasted until golden brown.

  • In a bowl combine the avocados with the lemon, salt, pepper and chili flakes. Smash together with the back of a fork until desired consistency.

  • Season the tomatoes with a pinch of salt and olive oil.

  • Once the bread is toasted spread a thick layer of the avocado covering most of the bread.

  • Add the tomatoes , and cilantro to finish. (I like to add more chili flakes and crack pepper at this point as well.) Enjoy!
