Easy Skillet Shepard’s Pie

Shepard’s Pie is a feel good,warm and cozy one pot wonder. It’s the epitome of a classic winter meal which makes it great to have in gatherings or all to yourself and a cold winter night.

Okay, so technically we’ll be using two pots in this recipe if you’re counting the pot used to make the creamy mashed potatoes. Nonetheless it’s still a very simple, flavorful and easy meal to make. Shepard’s pie is made up of a few ingredients lamb, veggies, potatoes I’ve added a few others to boost all the warm and deep flavors. If you aren’t a fan of lamb feel free to use ground beef instead and now you’ve made a cottage pie. Either way this dish is a winter go to which will definitely keep you coming back for more!

Prep Time: 20 min Cook Time: 45 min

Yields about 6 serving

Ingredients:

For the potatoes

  • 1 lb of russet potatoes

  • 2 cups of heavy cream

  • 2oz of salted butter

  • 2 teaspoon of salt

For the meat

  • 1 lb Lean ground lamb or beef

  • 1/3 cup of cured bacon (optional)

  • 1 /2 cups diced white onion

  • 1 cup of carrots (small dice)

  • 1 cup of celery (small dice)

  • 1/2 cup of frozen peas

  • 1/2 tablespoon of chopped garlic

  • 1 tablespoon of tomato paste

  • 2 tablespoons of olive oil

  • 1 tablespoon of kosher Salt

  • 1 tablespoon cumin powder

  • 1/2 tablespoon onion powder

  • 1/2 tablespoon paprika spice

  • 1 tablespoon of black pepper

  • 1/4 teaspoon of chili flakes

  • 1/2 tablespoon of ground oregano

Method:

  1. Start by peeling and dicing the potatoes.

  2. Boil in salted water for about 20 min or until soft.

  3. In a separate pot or microwave warm up the cream and butter.

  4. Once the potatoes are cooked, strain and slowly add the warm cream adjusting seasoning as needed.

  5. For the meat, bring oil to high heat.

  6. Add in the bacon and let cook until golden and crispy.

  7. Once the bacon is cooked add in the vegetables and cook for about 8 mins, soft but not fully cooked.

  8. Add in the meat and season with the spices. Like ground beef break down an bigger pieces of meat.

  9. Cook fully add in the frozen peas and tomato paste until thickened. Discard of any excess oil.

  10. Place an even layer of the mashed potatoes covering all the meat, avoiding and gaps.

  11. Place in the oven for 15 min at 400 degree F, or until the top is golden brown. Broil on low if needed.

  12. Wait 10 min and serve!
