The Best Double Chocolate Peppermint Cookies

If ooey gooey dark chocolate chip cookies are your thing this one is for you!

It’s hard to believe this year has finally come to an end. Although the rest of the year has been hard, and stressful I’m determined to make this last month the best one yet! After all it is “The most wonderful time of the year!” These cookies are so soft and chewy, they are the exact thing you need to have with a cup of milk or eggnog. So simple to make and the perfect activity to do with little ones. This year has been rough, making holiday cookies doesn’t have to be! I hope you enjoy them as much as I do. Happy Holidays!

Ingredients:

  • 1/2 cup soft butter or canola oil

  • 3/4 cup of light brown sugar

  • 1/4 cup of buttermilk

  • 2 large eggs

  • 1/4 teaspoon of vanilla extract

  • 1/2 teaspoon of peppermint extract

  • 1 1/4 cups All purpose flour

  • 1/3 cup cocoa powder

  • 1/4 teaspoon of kosher salt

  • 1/4 teaspoon of baking soda

  • 1/4 teaspoon of baking powder

  • 1 candy cane (crushed)

  • 1/3 cup of semi sweet chocolate chips

Method:

  1. Start by preheating the oven to 375 degrees F.

  2. In a bowl whisk and cream the egg, sugar and oil until well combined and fluffy.

  3. Add both the vanilla extract and peppermint extract and mix into the wet ingredients.

  4. In a separate bowl combine the dry ingredients and mix well.

  5. Slowly sift the dry ingredients into the wet ingredients until the cookie dough has formed.

  6. Mix in the chocolate chips.

  7. Place in the fridge for 5 min before baking.

  8. Line a baking sheet with parchment paper and place about a tablespoon scoop of cookie dough 2” apart.

  9. Bake for 9 mins. The middle will be gooey (bake 3 more min if that’s not your thing) place crushed peppermint on top and let set and cool fully.

  10. Enjoy with milk!
