Dark Chocolate Coconut Macaroons
The holidays are a time to spend with family, to share quality time next to a beautifully lit Christmas tree. It’s the best time of the year and the time of year where calories do not count, no matter how much you indulge.
These dark chocolate covered coconut macaroons are exactly that, a guiltless pleasure, they’re healthy, sweet and possibly the easiest recipe you will be making this year. Six simple ingredients, 12 quick minutes and you have a dessert that will satisfy your sweet tooth without having to sacrifice the calories. I added white sugar pearls for a holiday effect but any design will do great with these sweet and healthy coconut treats.

Yields 12 macaroons
Ingredients:
2 1/4 cups of shredded unsweetened coconut
2 large egg whites
1/2 cup of honey
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup melted dark chocolate chips
white sugar pearls (optional)
Method:
Preheat te oven to 325 degrees F.
Prepare a 16” sheet pan by spraying a light coat of non stick spray.
In a microwave safe bowl place the honey and 2 tablespoons of water for 20 seconds to soften the honey.
In the same bowl whisk vigorously the egg whites until they become foamy.
Add in the remaining ingredients and fold in until the coconut is well coated and combined. (The mixture should be firm but still kind of moist.)
Using 1 1/2 tablespoon or an ice cream scoop, scoop the coconut mixture onto the sheet pan.
Place in the oven for about 11-12 min or until golden brown.
Meanwhile melt the dark chocolate in a double broiler or in the microwave for 20 seconds at a time or until completely melted.
Once golden brown remove from the oven and let cool completely! before moving them from the sheet pan.
Coat the bottoms or tops, as you wish with the dark chocolate and Enjoy!
