Charred Scallion Gremolata
Gremolata is a garnish usually made up of a few, fresh ingredients such as parsley, garlic, and lemon. Not to be confused with Chimichurri, Gremolata doesn’t have added vinegar or the typical ingredients a Chimichurri usually requires.
Iv’e charred green scallions to add a smokey flavor. This kind of “salsa” garnish goes really well with with pastas, steaks and meats such as veal and lamb but if I’m being completely honest it’s so delicious and full of so many bold yet somewhat bitter flavors you’ll most likely be putting this on everything!
Prep Time: 10 min
Makes about 1cup
Ingredients
2 full bunches of flat leaf parsley
3 whole garlic cloves
1 bunch charred scallions
1 lemon rind (chopped fine)
Pinch of chili flakes (optional)
1 teaspoon salt
3 Tablespoons of olive oil
Method
Combine all the ingredients into a food processor and pulse until the salsa combines and is at desired texture.
