Homemade Mac&Cheese
Easy cheesy Mac at home! Making Macaroni and cheese from scratch is a lot easier than everyone thinks. Nothing beats making something from scratch that requires just a few ingredients and very little time.
Ingredients:
1 1/2 cup of AP Flour
1 1/2 cup of butter
1 cup of seasoned breadcrumbs
1 tablespoon of olive oil
4 crush garlic cloves
5 springs of thyme
4 cups of half & half cream
1lb of elbow macaroni
1 teaspoon of fresh black pepper
1 teaspoon of kosher salt
1 teaspoon of cayenne pepper
1/4 teaspoon of ground nutmeg
1 cup sharp cheddar
1cup Colby Jack cheese
1/2 fontina cheese
1/2 cup fresh Parmesan cheese
Method:
Start by fully cooking your pasta in salted boiling water, drain and coat with a light layer of olive oil after cooked.
Meanwhile, in a large pot bring the olive oil to a medium high heat.
Add in the crushed garlic and thyme, remove when they begin to turn brown and become fragrant.
Place the butter in the pot and begin to melt. When melted add in the AP flour and create a roux.
Constantly stir and cook for 5-10 min until the roux begins to slightly turn golden and the flour is cooked.
Stream in the half and half making sure to stir so it doesn’t stick to the bottom and burn.
As the sauce begins to thicken, taste and adjust the seasoning, add more half and half if needed.
Once the sauce is thick and to liking add in the cheese making sure to melt all of the cheese before adding the cooked pasta.
Taste one more time, add in macaroni.
Incorporate all the sauce and macaroni well, then transfer to an oven safe dish.
Cover with breadcrumbs and Parmesan. Broil on hi for about 5 min or until the top of the macaroni is golden.
Wait 5 min and serve! Enjoy!
