End of Summer Mango Salad
The end of summer is here, and although I am ready for the fall candles and pumpkin spice everything. I’ll miss the fresh flavors of all the summer salads, the smell of a good steak grilling and all the amazing memories I was able to create this summer.
Here’s a simple salad to make for your last BBQ and send off the summer with a bang! enjoy alongside a grilled pork chop or a pan seared fresh Mahimahi. And if you’ve already dabbled into the new seasons fall flavors, pin this salad for for next year!
Ingredients:
1/2cup of strawberries
1 whole sour mango
1/2 English cucumber
1/3 cup of herbs Basil, Mint, Parsley
3 Tablespoons of fresh lime juice
1 Table spoon of sugar
1/4 teaspoon of chili flakes
Method:
Begin by washing your fresh strawberries under cold water and allowing them to dry on a paper towel.
Peel the sour mango and cut into desired shape. Dice, slice etc.
Combine mango, berries, cucumber in a bowl with the salt pepper, sugar and chili flakes let sit in the fridge for 15 min.
lastly, rough chop herbs toss lightly and serve cold.
